Kheer In a Instant

As January 10th rolls around every year, we in the Delish In A Pinch kitchen celebrate a life that was taken too soon by making her favorite dessert on her birthday.

We found this recipe online years back and absolutely love the ease and the finished product. Of course, we made it our own! Kheer is a mixture of rice, milk, and sugar, a mixture being made for over two thousand years in the Indian subcontinent. Rice pudding as some may call it. ๐Ÿ˜‰

Traditionalists look away!!! Using an Instant Pot cuts the time in half and gives you the same great flavor.

Heraโ€™s Pinch

Traditionally, kheer looks paler in color, to achieve this use granulated sugar instead of raw sugar.

Stir in the nuts at the same time as the raisins, then add a few on top when serving. It is delicious!

    KHEER RECIPE

  • 1/4 cup basmati rice

  • 1/2 cup water

  • 3 cups of whole milk

  • 1/2 cup of raw sugar
  • 1/2 teaspoon for ground green cardamom
  • Pinch of saffron

  • 1/4 cup Raisins

    For Garnish
  • Sliced Almonds

  • Pistachios

  • Cashews

DIRECTIONS

Rinse then soak basmati rice in cold water for 15 minutes. Drain, rinse and set aside. Press the saute button on the instant pit and add 1/2 cup water to the pot. Once the water begins to steam, pour the milk into the pot. Add the rice and stir. Secure the lid, close the pressure bale and cook for 20 minutes at high pressure. Naturally, release pressure.

Press saute. Add the sugar, cardamom, saffron, and raisins. Stir well until combined. The kheer will thicken as it cools. Serve this dessert hot, warm, cold, or at room temperature. Top with nuts and raisins prior to serving. !
